Here are the recipes, that some of you asked for, of two of the items that we had in our MTM meal this week...
Chocolate and Vanilla Pinwheels
125g margarine
125ml sugar
5ml vanilla essence
1 large egg
600ml cake flour
2ml salt
5ml baking powder
60ml cocoa powder
1. Cream the marg, add the sugar, vanilla essence and egg to the marg and mix well.
2. Sift the cake flour, salt and baking powder together. Add the dry ingredients to the marg mixture and mix.
3. Divide the mixture into two equal portions. Incorporate the cocoa powder into one half. Roll out the white mixture into a rectangle. Roll out the chocolate mixture into a similar shape then place on top of the vanilla mixture. Roll gently together until both mixtures are stuck together.
4. Roll up the mixture starting on the long side to form a Swiss roll shape. (I found this was easier placed on a piece of cling wrap and as I roll a smooth with the wrap). Cover with plastic wrap and place in the fridge for at least 1 hour.
5. Remove from the fridge, place on a cutting board and cut into 2mm thick slices.
6. Place on a greased baking tray and bake for 7-10 minutes at 180C.
Pumpkin Fritters
(This recipe is from my dear friend, Jerushia, who used to be my neighbour but had to move far, far away for her husbands work. Oh how I miss those afternoons drinking tea, chatting, copying each other's recipes, etc. while the kids played together. Sniff, sniff!)
This makes a large batch so just halve if necessary.
30ml soft butter
500g cooked pumpkin
4x250ml sifted self-raising flour
2.5ml salt
10ml baking powder
60ml sugar
2 eggs lightly beaten
5ml vanilla essence
milk to mix
oil
Cinnamon Sugar:
250ml castor sugar
10ml ground cinnamon
Put butter into hot pumpkin.
Sift dry ingredients into a large bowl.
Mix in pumpkin and rest of ingredients adding a little milk to make a thick batter.
Fry on both sides till golden brown.
coat in cinnamon sugar.
